Paleo Breakfast: TEX-MEX Omelet

Makes 2 servings

Ingredients:
4 eggs
1 bell pepper, diced
1 tomato, chopped
½ yellow onion, minced
1 cup cooked ham, diced
1 teaspoon olive oil
Sea salt and black pepper to taste
Optional: diced mushrooms or fresh spinach leaves

Omelet

Directions:
Wash the vegetables, dice and set aside. Whisk the eggs in a bowl and add salt and pepper.

Heat a non-stick skillet over medium heat and add olive oil. Pour half of the egg mixture into the skillet, coating the bottom of the pan. 

When the egg is partially set, use a spatula to scrape around the edges and tip the pan to allow the uncooked egg to spread onto the pan's cooking surface. Then immediately set the pan down and add half of the ham and vegetables to one side of the omelet.

Continue cooking until the egg is almost completely done.  Take the spatula to fold the empty side of the omelet over the ham and vegetable fillings. 

Cook approximately two more minutes and then plate the omelet to serve it.  Repeat to make the second omelet.
